Lechon (roasted pig) with a twist. The pork belly is prepared through an organic, fermentation process and stuffed with 15 different kinds of herbs. Chef Bagnet also makes his own authentic special sauce, both regular and spicy. He makes it using probiotics herbs and beef liver and bread crumbs.
