Slow Smoked Stuffed Meatloaf w/ Fluffy Garlic Mashed Potatoes

This classic comfort food with a twist will keep you coming back for more. The meatloaf is a ground beef and chorizo blend with lots of seasonings. It is then stuffed with copious amounts of Mozzarella cheese. The meatloaf is then put on the smoker with charcoal and mesquite wood to give it a very bold flavor. The garlic mashed potatoes are homemade and will put a smile on everyone's faces.
